This morning a piece of skin came off and and this afternoon i took a shower and another piece came off. whats the deal?

Well, usually, the skin coming off your knuckles is simply peeling. That usually happens if your skin is getting worn, and new skin is already formed. If that's not the case, you might need to get some hand cream (Oil based, not water) Vaseline works fine too.
